
Chateaubriand with Bearnaise Sauce

Classic Chateabriand, with Bearnaise Sauce, Fried Potatoes and some Brocolli Shoots - great stuff
900gms to 1kg or so of Chateaubriand

Prepare the Fried Potatoes
Recipe up to the re-frying point, trim the brocolli and place in the steamer, prepare the reduction for the bearnaise sauce and get the sauce ready to go
Recipe .
Pre-heat the oven to 450°F/220°C/Reg8. Salt and pepper the Chateubriand and quickly brown on both sides in an ovenproof pan.
Put the Chateaubriand into the oven at 450°F/220°C/Reg8 and cook for 20 minutes to deliver meat a point.
Meanwhile finish off the sauce, potatoes and steam the brocolli for five minutes or so.
Take out the steak and carve into thick slices
Picture , and serve with the potatoes, sauce and brocolli
