Leg of Lamb with Potatoes and Purple Sprouting Broccoli
Leg of Lamb pieces with a Red Wine Jus, Potatoes Savoyard, and a Gratin of Purple Sprouting Broccoli
2 kg leg of lamb
Slice the potatoes and prepare the Potatoes Savoyard Recipe
Trim and prepare the Purple Sprouting Broccoli Picture for Recipe using Purple Sprouting rather than Broccoli Shoots
Cut the lamb into 1 inch/2.5 cm pieces, two per person Picture . Put the remainder of the lamb to one side for other recipes Recipe .
Peel and cut the garlic cloves into thin slices. Separate out three or four stalks of fresh rosemary. Salt and pepper the lamb pieces.
Quickly brown the lamb in a little olive oil along with the garlic pieces. Add the rosemary and finish in the oven for twenty minutes at 350°F/180°C/Reg4 Picture .
Remove the lamb and keep warm. Put the cooking pan over a high heat, pour in the red wine and reduce to a tablespoonful per serving.
