Almost Tournedos Rossini

Fillet steak on a base of fried bread and pâté, topped with a mushroom and served with Madiera Sauce
It's "almost" because it should be topped with some truffle which was not available, and the steaks traditionally should be smaller in diameter and thicker. It was still very nice but will re-shoot/cook in the Autumn when truffles are available.

- Peel the mushrooms, trim if necessary, and soften in a little butter. Thinly slice the bread and cut to a shape that is smaller than the steaks. Quickly fry the bread in a little hot oil but only until only just golden.
- Spread a thin layer of pâté on the bread, and keep the bread and mushrooms to one side in a warm place Picture .
- Salt and pepper the steaks Picture . Put a thick bottomed pan over a high heat, and when hot add a tablespoonful of butter that should foam. Add the steaks and cook for a minute each side over a high heat. Reduce to medium heat and cook for a further two minutes or so each side.
- Meanwhile finish the chips, steam the mangetout and re-warm the sauce.
- Put the bread/pâté on to the serving plates, put a steak on top of each one, and then a mushroom on top. Pour over a little sauce and serve with the chips and mangetout Zoom .
