
Mayonnaise

Always worth making your own fresh mayonnaise made with really good ingredients. But I do use a blender!
three fresh organic free range eggs
Separate the yolks from the eggs and put into a bowl. Add the tablespoonful of good wine vinegar, and a half teaspoonful of salt. Mix well with a fork and put into the blender.
Put on to medium blend, and very slowly at the beginning pour in the olive oil. Gradually increase the speed of adding the oil until you have a thick mayonnaise.
If necessary, season with a little extra salt and wine vinegar or lemon juice. Note that depending what you are going to do with the mayonnaise you can thin this with a little warm water.
