
Roast Cod with Spinach, Potatoes and an Anchovy Cream Sauce

Roast Cod on a bed of mashed potato, spinach and served with a nice Anchovy Cream Sauce
1 kg or so piece of fresh cod
Cut slices off the cod of around 2 inches/5 cms thick. Divide into two removing all the bones

Make the anchovy sauce
Recipe and keep to one side. Peel the potatoes and put on to boil. Wash and trim the spinach.
About five minutes to when the potatoes will be cooked, dry the skin side of the cod pieces and season with salt and pepper. Put a little olive oil into a frying pan over a medium heat. Put the cod pieces skin side down and cook for five minutes.
Gently turn the pieces of cod over and finish off in the oven at 375°F/190°C/Reg5 for five to eight minutes.
Drain and mash the potatoes with milk and butter and season well. Cook the spinach

Pour some sauce over a serving plate. Take some spinach with some kitchen tongs making sure it is well drained and put a strip roughly the size of the cod pieces on to the serving plate. Lay a similar size piece of mashed potato on top.
Place a piece of cod on to the potato and serve immediately
