Bone and skin the cod and cut into pieces Picture , scrape and cut the potatoes into quarters lengthways Picture , and peel the shallots or baby onions Picture .
Dry the potato pieces and season with salt and pepper. Cook in a frying pan in a little olive oil over a medium heat for 5 to 8 minutes turning from time to time.
Take the potatoes out with a slotted spoon put in an ovenproof dish with a couple of tablespoonfuls of olive oil in the oven at 400°F/200°C/Reg6.
Put the peeled shallots in the same frying pan and cook over a medium heat stirring from time to time for 5 minutes or so. Take out with a slotted spoon and add to the potatoes in the oven.
Cook the potatoes and shallots for 15 minutes or so until the potatoes are just about cooked. If necessary spoon out any excess oil.
Meanwhile season the pieces of cod with lemon juice, salt and pepper. Quickly cook in the frying pan for a couple of minutes each side. Take out with a slotted spoon and add to the potatoes and shallots in the oven.
Trim and chop the parsley. After about five minutes or so, sprinkle the parsley and some lemon juice over the dish in the oven Picture Zoom .
