Chicken and Chips - needs re-cook/re-shoot

1½ kg or so free range chicken

  1. Chop the oregano, peel and chop the garlic, and mix with a couple of teaspoonfuls of olive oil.
  2. Use a sharp knife to make some small slits at the base of the breasts and legs. Use your fingers to loosen the skin, and then push in the oregano/garlic mixture  Picture  .
  3. Rub olive oil over the chicken and season with salt and pepper. Cover with foil and cook in the oven at 400°F/200°C/Reg6 for an hour. Take off the foil and cook for a further hour or so until golden brown and cooked through.
  4. Meanwhile make the Leeks and Parmesan  Recipe  . And prepare the chips.
  5. Joint the chicken, and keep warm  Picture  . Finish off the chips and serve with the leeks  Zoom  .
Serves: Four

Serve with: Leeks with Paremesan, and Chips
