
Greek Salad

Greek style salad with lettuce, tomatoes, mint, feta, olives and cucumber.
There are of course many possible sets of ingredients for a Greek salad, these just work very well.
Make a dressing with 9 tablespoonfuls of olive oil, two tablespoonfuls of freshly squeezed lemon juice and salt and pepper to taste.
Discard the outer leaves of the lettuce, trim and cut laterally into one inch/2.5 centimetre slices. Cut the tomatoes into thin slices discarding the end slices. Peel and cut the cucumber into thin slices.
Cut the feta cheese into fine pieces. If necessary, stone the black olives and cut into halves. Tear the mint into medium sized pieces.
Individually very lightly dress the lettuce, tomato, and cucember slices.
Create a layered salad in individual dishes with layers as follows: lettuce, tomatoes, mint, cucumber, feta and olives. Pour over one or two additional teaspoonfuls of dressing and serve
