Peel and finely chop the onion. Lightly crush the cardomum, cumin and coriander seeds in a prestle and mortar Picture .
Put a thick bottomed saucepan over a medium heat for a couple of minutes until hot. Add the spices and roast for about a minute tossing from time to time.
Take the saucepan off the heat. Add a couple of tablespoonfuls of olive oil, add the onions and saute for three or four minutes stirring from time to time until soft.
Stir in the tumeric followed by the rice. Cover with water and simmer for 15 minutes or so until cooked. Take off the heat, drain off any excess liquid, and cover with a lid until needed Picture .
