
Grilled Halloumi with Baby Tomatoes

Slices of Halloumi grilled and served on a bed of Oven-baked Tomatoes along with good Olive Oil and fresh Oregano.
You need to select the best sweetest, most flavoursome baby tomatoes you can find for this dish.
Trim the tomatoes, and cut in half. Put a smear of olive oil in an ovenproof pan, add the tomatoes, sprinkle over a little more olive oil and cook in the oven at 350°F/180°C/Reg4 for about ten minutes

Meanwhile cut the Halloumi into slices and lightly season with some salt. Trim and chop the Oregano. Put some foil on to a grill dish and smear with a little oil (or do on the barbecue). Grill the cheese for a few minutes each side.
If you want to be 'flash', heat a skewer and mark the cheese. Take the tomatoes out with a spatula and put on to serving dishes. Sprinkle with a little Oregano. Put the cheese on top and then sprinkle with some more Oregano and a little olive oil and serve with some pitta
