Salt Cod Fish Cakes served with a simple Fresh Tomato Sauce
500 gm dried salt cod
Cover the salt cod with water and soak over night changing the water at least four times Picture .
Make the Fresh Tomato Sauce Recipe and set to one side. Boil the potato and keep. Use a blender/mixer to make breadcrumbs. Start steaming the baby carrots.
Take out the salt cod on to a board and remove the skin and bones. Put the cod into a shallow pan, just cover with milk and simmer for 15 minutes or so. Take the cod out of the pan and put in a bowl along with the cooked potato and a tablespoonful of butter. Stir in some of the cooking milk and mash with a fork. Finish off with a few spins from a hand blender and form into cakes Picture .
Put a little oil in a frying pan. Dip the cod cakes into the flour, followed by coating in beaten egg and then the breadcrumbs. Cook at a medium heat in the frying pan until golden brown on both sides.
Put the carrots on to serving dishes, and sprinkle with a very little olive oil, add some spoonfuls of tomato sauce, followed by a fish cake and serve with a lemon wedge Zoom .
