Dolcelatte and Pear Salad

Cut the bread into slices, remove the crusts and cut into cubes. Make croutons in a frying pan with a little olve oil. Peel the pears, cut into slices and cube discarding the core pieces. Cut the dolcelatte into cubes  Picture  .

Peel and crush a clove or two of garlic. Take four tablespoonfuls of yougurt, add a tablespoonful of squeezed lemon juice and the garlic. Thin with a couple of tablespoonfuls of water, combine with a spoon, and season to taste with a little salt.

Trim the spinach of any large stalks if necessary. Dress and toss with a few drops of olive oil.
