
Prawn Cocktail

Yet another retro memorable but perhaps not mind-blowing dish of Prawns and Crisp Lettuce with the traditional Horseradish/Mayonaise/Tomato Sauce.
Peel and head the prawns. Cut each into two bitesize pieces if necessary. Sprinkle over some lemon juice and season with a very little salt.
Make the sauce by mixing the ingredients and adjusting the seasoning with some lemon juice, salt, extra tabasco and horseradish etc.
Trim the outer leaves off the lettuce and cut into thinnish strips. Make a dressing with six to one olive oil to lemon juice and very lightly dress the lettuce with a tablespoonful of the dressing.
Put a layer of lettuce in the bottom of a very large glass. Put the prawns on top followed by a little of the sauce followed by another layer of lettuce and a good tablespoonful or so of the sauce.
Serve with some lime slices on the rim of the glass and the bread and butter.
