one farmed rabbit for two people

  1. Cut the rabbit into small joints  Picture   and season well with salt and pepper.
  2. Put a little olive oil in a frying pan, add the rabbit joints, and brown well on all sides. Transfer the rabbit to an ovenproof pan and put in the oven at 375°F/190°C/Reg5 for about 30 minutes  Picture  . Meanwhile prepare the potatoes  Recipe  .
  3. Peel and chop the onion, put in a pan with a tablespoonful of olive oil and soften for five minutes or so. Meanwhile drop the tomatoes into boiling water and remove the skins, then cut roughly into quarters. Remove the pith from the pepper and cut into thinish strips.
  4. Add the tomatoes to the onion, continue to cook over a medium heat, mashing down with a wooden spoon. Add the strips of pepper and cook for a further five minutes or so. Then put to one side  Picture  .
  5. Peel the mushrooms cut into small dice, and quickly cook in a tablespoonful or so of butter for a few minutes. Add a few pinches of cayenne pepper, stir it in and put the pan to one side  Picture  .
  6. When the rabbit and potatoes are ready, rewarm the tomato mixture, mushrooms and the oil in the rabbit frying pan. Serve and pour a little of the oil over the rabbit  Zoom
