Peel and chop the onion, put in a pan with a tablespoonful of olive oil and soften for five minutes or so. Meanwhile drop the tomatoes into boiling water and remove the skins, then cut roughly into quarters. Remove the pith from the pepper and cut into thinish strips.
Add the tomatoes to the onion, continue to cook over a medium heat, mashing down with a wooden spoon. Add the strips of pepper and cook for a further five minutes or so. Then put to one side Picture .
