
Almond and Garlic Sauce

Intriguingly nice sauce from the Middle East for use on a variety of dishes.
There are lots of recipes for this sauce, but this one works/is under development for me.
good handful of blanched almonds (full, halves or slivers)
Peel and finely chop the shallots, put in a saucepan with a little olive oil, and soften for five minutes. Meanwhile peel and finely chop the cloves of garlic, add to the onion and soften for another five minutes.
Meanwhile chop the almonds into slivers if need be. Put in a thick bottomed pan over a high heat and turn to brown but not burn. Add the almonds to the onions along with the chicken stock. Put everything into a mixer and blend to a smooth sauce.
Season the sauce with a little sauce, add a two or three tablespoonfuls of double cream and re-season if necessary.
