Lamb Fillet with a Tomato and Lentil Sauce

A simple rather comforting dish of Lamb Fillet with a Tomato and Lentil Sauce served with Spinach and Mashed Potato


four lamb fillets one per person

  1. Make the sauce by firstly peeling and chopping an onion and softening in a tablespoonful or so of olive oil. Peel the garlic cloves, cut into fine dice and add to the onion.
  2. Meanwhile pour boiling water over the tomatoes, take them out one by one and remove the skin, and cut into quarters. Add them to the onions when soft, mush down a bit with a wooden spoon, and then simmer for ten minutes or so.
  3. Rinse the lentils in a sieve, put in a saucepan well covered with water, and simmer for about twenty minutes adding some more boiling water if required.
  4. Use a Mouli Legume on the coarsest blade to reduce the tomatoes, add about eight tablespoonfuls of the mixed lentil and season to taste with salt  Picture  .
  5. Trim any excess fat of the fillets and cut into half  Picture  . Season well with salt and pepper. Brown well all over in a little olive oil and then put in the oven at 350°F/180°C/Reg4 for about twenty minutes.
  6. Prepare the mashed potato, spinach  Recipe  , and rewarm the sauce. Take out the fillets, cut into slices and serve with a little sauce poured over the lamb  Zoom  .
