
Gooseberry Sauce

A very summery sauce commonly served with Grilled Oily Fish, but also very nice with a full flavoured Cheese
Other recipes include butter, cream, and other ingredients. Before you add this stuff, try this very simple recipe.
Top and tail the gooseberries using some scissors, and wash in a colinder under the tap.
Put the gooseberries into a thick bottomed saucepan along with the sugar and water. Put over a medium heat, simmer, and use a wooden spoon to squash the gooseberries from time to time.
After about ten minutes you should have a thickish sauce. Add more sugar if necessary - you want it a little tart but not acidic. Allow to cool and serve warm or cold.
