Prawns with Parsley

Peel and finely chop the shallots. Cook in a few tablespoonfuls of olive oil stirring for five minutes or so but don't allow to brown.

Add the prawns to the pan and cook over a medium heat, turning them until they are coloured  Picture  

Stir in a good handful or so of chopped parsley, followed by a little coarse salt to taste.

Serve with the cooking olive oil with some good bread.
