Potatoes Cooked in Butter

Scrape the potatoes and cook in boiling water for five minutes. Take out and drain, season with salt and pepper.

Put ½lb 250 gms butter in an ovenproof dish, and quickly melt on top of the stove. Add the potatoes and some Rosemary if used, cover in the butter and put in the oven at 400°F/200°C/Reg6. Cook for about an hour turning from time to time.

Use some tongs to serve when ready.
