
Poached Egg with Smoked Salmon and Caviar

Delicious dish of Poached Egg on Smoked Salmon on a Muffin coated with a little Hollandaise Sauce with a Caviar garnish
This is very nice and makes as good a breakfast as it does a starter
a good organic egg per serving plus an egg for the hollandaise
Poach the eggs and keep in cold water as in Eggs Benedict
Recipe Make a small amount of Hollandaise Sauce using one egg and a little butter as in Hollandaise Sauce
Recipe . Season to taste and thin down with a little warm water.
Put the poached eggs into hot water to warm through.
Trim the smoked salmon to fit on the muffins. Cut the muffins in half and very lighly toast on both sides. Spread a very little butter over the bread side. Put the salmon on the muffins and quickly warm under a medium grill

Put the poached eggs on the muffins
Picture , coat over a little hollandaise sauce, sprinkle over a little caviar and serve immediately
