
Port Sauce

A very good sauce for serving with game like Grouse and Venison
half a glass of good Port
Put the chicken stock over a medium heat and reduce by a further 20%. Add a a half glass of Port and simmer for a few minutes. Season to taste with salt and pepper.
When the game is cooked, add the sauce to the cooking pan and use a spatula to amalgamate the bits of meat from the bottom of the pan.
