One of the nicest waxy potatoes pre-boiled and then sauteed in butter and olive oil


0.5 kg Roseval potatoes

  1. Clean potatoes and remove any blemishs. Simmer in boiling salted water until just cooked.
  2. Drain the potatoes and let them dry in the steam. Cut into slices and season lightly with salt and pepper.
  3. Heat oil and butter in a thick bottomed frying pan and add potatoes. Fry turning over a medium heat for five minutes or so until browned.
Serves: two or three
