
Creamed Cabbage with Mushrooms and Bacon Lardons

This is Savoy Cabbage with a very little cream and some Mushrooms and Lardons, it's just a great accompanyment to all sorts of dishes, with lots of possible variations.
a savoy cabbage (or similar but be careful to get something very similar)
Remove any coarse outer leaves from the cabbage, cut into quarters and then cut out all of the core. Then slice the cabbage into small pieces

Peel and cut the mushroom into fine dice, and quickly cook in a little butter seasoning with a little cayenne pepper
Picture . Quickly grill the bacon and cut into fine lardons.
Blanch the cabbage for about eight minutes (no more) until softer but still a little al dente. Drain very well, put back in the saucepan, stir in the mushrooms and bacon and carefully season to taste with salt and pepper.
Stir in the cream, and reseason if necessary. Reheat over a low light stirring as you do so if need be and serve.
