Veal Chops with an amazingly nice mushroom sauce served with pak choi and crushed new potatoes with spinach

Prepare the Crushed Potatoes with Spinach Recipe and put in the oven.
Barely cover the porcini with water for fifteen minutes or so. Clean the girolles, cut into smallish pieces and soften in a tablespoonful of butter for three or four minutes. Meanwhile drain the porcini retaining the liquid, cut into smaller pieces and cook with the girolles for another minute or so.
Trim the veal chops and salt and pepper and lemon juice on both sides. Cook in a very little oil over a medium heat for around three minutes per side. Remove the chops and keep warm in a low oven Picture .
Prepare the Pak Choi and put in the steamer Recipe .
Deglaze the veal chop pan with a glass of red wine and reduce the wine by a half. Make a beure manier by thoroughly mixing the butter and flour and stir into the pan removing any lumps with a wooden spoon. Add the veal stock and the porcini liquid and simmer for a few minutes. Add the mushrooms and a couple of tablespoons of double cream, and season to taste.
Serve the veal chops, pour over some mushroom sauce and the remaining vegetables.
