Sweet Potatoes baked with Coriander

Peel the sweet potatoes, and cut into slices ¼ inch/½ centimetre thick, discarding the end pieces.

Very lightly oil a baking tray with a little oil. Lay the sweet potato slices in the tray and season with salt and pepper. Sprinkle over some olive oil and then the chopped coriander.

Cook in an oven at 400°F/200°C/Reg6 for about 20 minutes until just tender but not brown.
