
Sauce Tartare

Good Mayonnaise combined with Gherkins, Green Olives, Capers and Herbs makes an excellent sauce to go with fish
This is so much better homemade, including the mayonnaise. The stuff ready made out of the bottle just does not compare.
Take the stones out of the olives. Chop the gherkins, capers and olives not too finely and stir into the mayonnaise. Use some scissors to snip the chives adding it to the mixture.
Season to taste with a little salt and pepper and a very little lemon juice as required.
