Very Simple and Light Pudding
Use a knife with a serrated blade to remove the peel and pith from the oranges. As each orange is peeled, cut it into four or five slices and then re-consitute the orange and keep in shape with a cocktail stick. Place each orange in a glass.
Pour a couple of tablespoonfuls of cointreau over each orange, followed by a couple of teaspoonfuls of sugar. Put in the fridge for an hour or so.
Take the oranges out of the fridge, garnish with a couple of mint leaves and serve.
