
Foil Baked New Jersey Potatoes

This is a great way of cooking new Jersey Potatoes when they become available in the spring (in the UK)
Scrape the potatoes, shake off excess water in a colinder and lay on a large square of foil.
Sprinkle a little olive oil over the potatoes, followed by a little salt and use some scissors to add little chive pieces. Wrap well in the foil, put in an ovenproof dish and cook in the oven at 400°F/200°C/Reg6 for about 45 minutes.
Check that the potatoes are cooked with a knife, if not cook a little longer, otherwise recove with foil put in a low oven and serve when ready.
