
Smoked Salmon with Pasta

Very simple but tasty starter of pasta, cream and smoked salmon
spaghetti or thinner pasta for four
Cook spaghetti or thinner pasta in salted boilng water for ten to twelve minutes until lightly cooked. Drain well and put back in the saucepan.
Meanwhile cut the smoked salmon into thin strips and sprinkle with a little lemon juice. Melt a tablespoonful of butter in a saucepan, add the smoked salmon and cook and stir for a few minutes until the salmon is a light colour all over. Take off the heat and season with black pepper to taste.
Stir the salmon into the pasta. Stir in a few tablespoonfuls of single cream. Re-season with salt and pepper if required. Serve immediately with a little chopped parsley
