Sea Bass with Tomato Salsa

A very simple but great dish of Sea Bass with a Tomato Salsa


one or two fillets of Sea Bass per serving depending on size of the fish and greed of diners  Picture  

  1. Prepare the Rosemary Potatoes  Recipe   if used, and start cooking. Prepare the Tomato Salsa  Recipe  .
  2. Wash the sea bass fillets under cold water, dry with some kitchen paper, season with salt and pepper and squeeze over a little lemon juice.
  3. Put the oven on at 350°F/180°C/Reg4. Put a couple of tablespoonfuls of olive oil in an ovenproof pan over a medium heat. Put the fish in the pan skin side up and quickly brown for a couple of minutes. Turn the fillets over and cook for a further two minutes  Picture  . Put in the oven and keep warm for two or three minutes.
  4. Carefully heat the salsa. Serve the potatoes  Picture  . Take the fish from the oven and put on the serving dishes skin side down. Spoon over a little salsa and serve  Picture   along with the potatoes  Picture  .
Serves: Four

Serve with: Tomato Salsa  Recipe   and Rosemary Potatoes  Recipe
