Lamb Rissoles with Minted Hollandaise Sauce

Lamb Rissoles made from the remainder of the Barbecued Lamb served with a Minted Hollandaise sauce and vegetables.


around ½ kilo of lamb left over from the Barbecued Lamb

  1. Peel the onion and garlic cloves. Mince them together with the lamb.
  2. Finely chop the rosemary, and add to the mince along with the tomato puree and fresh breadcrumbs. Add a teaspoonful of salt and a good amount of black pepper. Stir well, and then season to taste with more salt as required. Beat the egg and mix in to the mixture.
  3. Make the mixture into rissoles with your hands. Coat in seasoned flour, and fry on a medium heat in a little oil until golden brown and hot all through  Picture  .
  4. Meanwhile make the minted hollandaise by adding handful or so of finely chopped mint added to the initial egg yolks and lemon juice in the hollandaise  Picture    Recipe  .
  5. Mean meanwhile prepare the carrots baked in the oven with garlic and tarragon  Picture    Recipe  , and steam some brocolli florets.
  6. Serve the rissoles along with the hollandaise sauce, carrots and brocolli.
Serves: Two to four depending on the amount of meat available.
