Roast Beef

Roast Sirloin of Beef with oven baked carrots, broccoli with hollandaise sauce and potatoes cooked in cream and garlic
1.5 kg good hung sirloin of beef
- Set oven at 425°F/210°C/Reg7. Overall cooking time is 15 minutes to the lb or 500 grams and 15 minutes over. This produces rare beef.
- Salt and pepper beef. Peel and slice up garlic cloves and put into a roasting pan. Add beef to the pan and put in the oven for 30 minutes.
- After 30 minutes, drop temperature to 375°F/190°C/Reg5 and cook for remainder of time.
- Take the beef out of the oven and roasting dish, cover with foil and keep warm Picture . Put broccoli on to steam.
- It's unlikely you will have excessive fat, but if so pour some off. Thoroughly stir in the flour. Add the wine and madiera and reduce a little over a low light stirring from time to time.
- Add the stock and heat to bubbling continuing to stir. Season with salt and pepper. Pour a little gravy over the meat when served. Serve rest separately.
- Slice the beef and serve on a hot plate with vegetables Zoom
