Roasted Red Gurnard with Anchovy Butter

Red Gurnard looks beautiful, has a firm tasty white flesh, and roasted makes a great and easy to prepare dish

  1. Prepare the Anchovy Butter and put in the fridge, and start the potatoes the cooking. Wash the fish under the cold water tap, dry with some kitchen paper, and season with some salt.
  2. Quickly fry the fish in a little olive oil for a minute or so on each side being careful that they do not stick and tear the skin. Then paint with some olive oil with a pastry brush, and cook in the oven at 375°F/190°C/Reg5 for about ten minutes  Picture  .
  3. Serve immediately along with the potatoes and dressed leaves, along with lemon pieces and the Anchovy Butter  Zoom  .
Serves: One fish per serving

Serve with: Some little new potatoes, a few leaves maybe, a piece of lemon and some Anchovy Butter  Recipe  .
