Duck Salad

Great salad either as a starter or full supper dish.


Some ingredients  Picture  

  1. Clean, trim and thinly slice the radishes, quarter the walnuts, trim and cut the celery into thin short slices, and stone and quarter the cherries if used. Put the ingredients including the leaves but excluding the cherries into a salad bowl  Picture  .
  2. Make a light dessing with five tablespoonfuls of oil, a couple of good squeezes of lemon juice and season with salt and pepper.
  3. Strip the fat off the duck breasts by putting fat side down on a chopping board and cutting away from you with a sharp knife. Cut the duck into thin slices across the breast  Picture  .
  4. Season the duck with salt and pepper, fry in batches on both sides in a hot pan in a tablespoonful of oil. Toss and dress the salad, add the duck and cherries and serve  Zoom  .
