Salsify with Parmesan

Wash the Salsify under the cold water tap, cut an inch off each end, and scrape off the black skin with a vegetable knife. Cut into three inch slices and then into quarters lengthwise  Picture  .

Season the prepared Salsify, put in an oven-proof dish, and sprinkle over some butter pieces  Picture  . Cook in the oven at 350°F/180°C/Reg4 until still firm but not hard. Sprinkle over the parmesan, stir in and finish off under the grill turning a few times, and serve  Zoom  .
