Slow cooked Lamb Shanks with Herbs served with Roast Potatoes and a Greek Salad

There are lots of different Kleftico recipes but most of them like this one involve slowly cooking lamb. It's comforting tasty food equally as good in winter as in the rest of the year.

  1. Put the lamb shanks into a container suitable for marinading. Squeeze over the juice from the lemons, and add some of the herbs and the lemon rinds. Stir well  Picture  , cover and marinade for at least four hours or over night turning a couple of times during this time.
  2. Chop the remaing herbs. Remove the shanks from the marinade, lightly coat with olive oil, season with salt, roll in the chopped herbs and place in an ovenproof casserole along with a couple of quartered lemon rinds from the marinade . Cover the shanks tightly with two layers of cooking foil and cover with a lid. Cook for three hours at 325°F/170°C/Reg3. If you need to, lower the oven temperature for no longer than another 30 minutes.
  3. Meanwhile when it's an hour to go prepare the Roast Potatoes  Recipe  . Then start to assemble the Greek Salad  Picture    Recipe   - note that it is worth taking some trouble with this as the salad, lamb and potatoes are a great combination.
  4. Only slightly warm the serving plates so people can eat the salad from the plates. Take out the lamb and put on the serving plates along with the Roast Potatoes and serve  Zoom  .
