Golden Beetroot with Goats Cheese and Rocket

Trim and clean the beetroot using a vegetable knife. Steam the beets for 30-45 minutes until just tender and allow to cool.

Meanwhile cut the rind off the cheese and cut into small pieces  Picture  . Make a dressing with six tablespoonfuls of good olive oil and one tablespoonful of freshly squeezed lemon juice and season with salt. Lighly toss the rocket in the dressing  Picture  .

Cut the cooled golden beetroot into chunks  Picture   and very lightly season with salt. Put some of the rocket into each serving dish, add the beetroot and cheese and serve  Zoom  .
