
Sauteed Leeks with Thyme

Sliced leeks and fresh chopped thyme, sauteed in a little butter until soft, and finished with a squeeze or two of lemon juice
for to five large leeks or equivalent
Trim the leeks and remove the outer layer. Check that they are free of any earth and cut into thinnish slices.
Strip the thyme leaves of the stalks, and chop finely to yield a good heaped tablespoonful.
Add the butter to a thick bottomed saucepan over a moderate heat. Add the leeks and thyme, and season with salt pepper. Cook until softish but not too soft and not brown in any way stirring fairly frequently.
Season with a little lemon juice, and more salt and pepper if required
