
Tomato Sauce

A really nice 'sauce' good with any fish
Peel and dice the onion, put into a saucepan with a couple of tablespoonfuls of olive oil. Soften over a medium heat stirring from time to time. Peel and cut the garlic cloves into small pieces and add to the onion.
Meanwhile, cut the tomatoes into quarters discarding pips and juice, and chop the sundried tomatoes into small pieces. When the onion is soft add both sorts of tomatoes to the saucepan. Stir from time to time until the tomatoes are soft. Chop the oregano and stir into the mixture.
Put the contents of the saucepan into a blender and blend until the tomato skins are no longer visible but the sauce is still quite chunky. Remove to a bowl, allow to cool and then season with salt and lime juice.
