Spaghetti with Purple Sprouting Broccoli

Terrific starter of Spaghetti with Purple Sprouting Broccoli, Chilli, Anchovy and Garlic

  1. Trim the sprouting stalks of the broccoli quite harshly and just cut the last little bit of stalk in two. Top and tail the chillis, cut into two lengthwise, remove the seeds and finely chop. Cut the anchovies into two lengthwise and then chop finely. Peel the cloves of garlic and chop finely.  Picture  .
  2. Put the spaghetti into salted boiling water and cook for ten minutes or until just cooked. Meanwhile steam the broccoli for around eight minutes until the stalks are softer but still crisp. Add the chillis, garlic, and anchovies to the eight tablespoonfuls of olive oil in a pan over a medium heat. Mash the anchovies with a spatula and cook all the ingredients until softer for five minutes or so.
  3. Drain the spaghetti well, return to the pan and stir in a couple of tablespoonfuls of the chilli/garlic/anchovy oil. Put the broccoli into the chilli/garlic/anchovy oil over a medium heat and turn well for a couple of minutes  Picture  .
  4. Put the spaghetti into serving dishes, add the broccoli, season with grated parmesan and serve  Zoom  .
