Venison Noisettes with Mushrooms and Vegetables

Noisettes of Venison Fillet served in a great sauce with Mashed Swede and Carrot, and Spring Greens with Chilli

  1. It's really worthwhile if you can make a venison stock using a cheaper venison joint haunch. Follow the beef stock recipe  Recipe   and use some haunch pieces and no bones. If you cannot do this use some beef stock, cube if need be.
  2. Cut the venison fillet into slices around a half inch thick and lightly season with salt and fresh black pepper. Peel the mushrooms, and cook quickly in a little olive oil, and season with a little cayenne pepper  Picture  . Start preparing and cooking the Swede and Carrots  Recipe   and Spring Greens with Chilli  Recipe  .
  3. Sear the venison slices on both sides in a little olive oil and transfer to an ovenproof casserole. Pour over the stock to barely cover and cook in the oven at 180°C/Reg4/375°F for about 15 minutes. Mix a tablespoonful each of butter and flour to make a beurre manier. When the venison is done, thicken with the beurre manier and season well with salt and pepper.
  4. Stir in the mushrooms over a hot heat, finish the vegetabes and serve with the venison  Zoom  .
Serves: Four
