Griiled Sardines with a great Basque Piperade

  1. Make the piperade  Recipe  . Meanwhile clean the sardines if necessary but leave the heads and tails on. Wash them under a cold tap and remove any scales. Dry them with some kitchen paper, paint with olive oil and lemon juice and season with salt and pepper. If you have any fish cooking cages this is the best way to barbecue fish  Picture  .
  2. Barbecue the sardines until well coloured  Picture   and then serve with the warm piperade.
Serves: Four

Notes: You can cook the sardines under a grill, but much better on the barbecue.
