Pizza with a great flavour combo of green pepper and chorizos

This is absolutely one of my favourite pizzas

quantities below per pizza

  1. Make the pizza dough, I used the Jamie Oliver recipe at  Link   but there are others on the net. 500 gm of flour makes about three good sized pizza. Make the tomato sauce  Recipe   and put to one side. Chop a handful of oregano and mix in with a half dozen tablespoonfuls of olive oil.
  2. Peel the onion and cut into very thin slices - a mandoline is ideal for this. Cut the pepper into two, cut out and discard the pith, then cut into as thin slices as possible - a mandoline is wonderful for this! Cut the chorozos into thin slices, and cut the proscuitto into roughly one centimetre squares. And lice the mozzarella into small blobs.
  3. Roll out a portion of pizza dough, put a couple of tablespoonfuls of the tomato sauce in the middles of the pizza and use a spoon or fork to spread it out to within a centimetre or so of the edge of the pizza. Add a light layer of onions followed by a few pices of proscuitto and a few blobs of mozzarella, then a layer of green pepper, and then place the slices of chorizos randomly on top. Sprinkle over some of the oregano olive oil and you are ready to go  Picture  .
  4. Put the pizza preferably into a wood burning oven at around 425°F/210°C or so and cook for around ten minutes or until the dough is cooked.
Notes: I cooked this in a wood burning oven, you can cook it in a normal oven but even on a pizza stone you really don't get that texture of the base which makes pizza so special.
