
Greek Roast Lamb

Great Welsh Leg of Lamb Roasted in Woodburning Oven, served with Greek Roast Potatoes and a Greek Salad, lovely eaten outside on a nice sunny day
around 2Kg good leg of lamb
Make sure the leg of lamb is at room temperature, use your hands to coat with a little olive oil and season all over with salt and pepper. Put in a roasting tin covered with foil and put in the oven at around 425°F/210°C

Cook for around 2 hours allowing the oven to cool. Take the foil off after an hour or so but keep a careful watch to see the meat does not over-brown, re-cover with foil if necessary. At around 1 hour 45 minutes use a carving fork to test whether it is cooked to your taste.
When ready
Picture move to a carving dish and re-cover with some foil. Finish off the potatoes and then carve into thickish slices pouring over a little of the cooking oil if you like, and serve with the potatoes and salad
