Greek Roast PotatoesWood Burning Oven

Distinctly different from normal Roast Potatoes, cooked in Olive Oil and Lemon Juice and flavoured with Garlic and Oregano


four or five large potatoes

  1. Peel the potatoes and cut into quarters along the length of the potato. Put them into a roasting dish.
  2. Measure out the olive oil and water in a measuring jug, crush the garlic and add to the jug, chop the oregano to deliver a handful and add to the jug along with the juice of two lemons and a couple of teaspoonfuls of salt. Use a fork to mix all the ingredients well. Pour over the potatoes and use your hands to make sure the potatoes are well coated  Picture  .
  3. Put them into the woodburning oven at around 450°F/220°C for about 45 minutes. Keep a careful eye on them turning as they get browned. Add a little more water if the pan begins to run out of liquid. When they are brown all over and cooked through take out of the oven and keep warm covered with a little foil.
Serve with: Went very well with Greek Roast Lamb  Recipe
