Very pretty dish mainly due to the purple outside of the carrots, but also very tasty.


two or three or more purple carrots depending on size

  1. Top and tail the salsify, scrape well and cut each root into two or three pieces and then lengthways in half. Keep in some water acidulated with lemon juice if you are not going to cook immediately. Scrape the carrots and depending on size cut into two and the two or four lengthwise.
  2. Drain and dry the salsify and carrots, lay in an ovenproof dish, liberally sprinkle over some olive oil, and season generously with alt and pepper.
  3. Put uncovered in a wood burning oven or conventional oven at 400°F/200°C/Reg6 and cook for about 30 minutes stirring from time to time until they are barely tender. Keep warm until needed, chop some parsley to garnish (which I forgot to do) and serve  Zoom  .
