Calves Liver with Pancetta and Vegetables

Calves Liver is great and griddled on a base of courgettes, broad beans and spinach and garnished with slices of grilled pancetta makes this a great dish


thin slices of calves liver depending on size around two slices per serving

  1. Prepare the vegetables  Recipe  , in addition chop a good handfull of sage leaves and stir in with the spinach. Keep warm to one side.
  2. Grill the pancetta on both sides until golden  Picture  . Meanwhile season the liver liberally with salt and pepper. Put a little olive oil into a griddle pan and put over a medium heat until hot. Put the liver into the griddle pan and press down with a fish slice (or similar) and cook for a about three minutes per side.
  3. Put a layer of vegetables on each serving dish, add the slices of liver and pancetta and serve immediately  Zoom  .
Serves: Four

Serve with: Dish of courgettes, broad beans and spinach  Recipe
