Duck Breasts with Green Peppercorn Sauce

Duck Breasts served with Green Peppercorn Sauce, fine green beans and sauteed new potatoes with garlic

  1. Make the green peppercorn sauce beforehand and keep warm  Recipe  . Boil the new potatoes for the saute potatoes and drain. Prepare fine beans.
  2. Dry the duck breasts with kitchen paper and salt and pepper on both sides.
  3. Put a heavy bottomed pan on a medium heat and add a tespoonful of oil. Add duck breasts and cook skin side down for three minutes, repeat on the other side. Reduce the heat and cook for another two to three minutes.  Picture  
  4. Remove the duck breasts and put in the oven 400°F/200°C/Reg6 for five minutes. Take out and slice a breast and check it is cooked pink or to your test. If not cook in the oven for another five minutes or so.
  5. Meanwhile prepare the potatoes sauteed with garlic  Recipe  .
  6. Cut the duck breasts into very thin slices and put on the plate. Pour over the peppercorn sauce and add the vegetables.  Zoom
