Veal Chops with a Garlic, Lemon and Tarragon garnish

Simple, subtle dish of Veal Chops quickly cooked with a gremolata type garnish and served with Spinach, Turnips, and Courgettes

  1. Trim the veal chops, season well with salt and pepper and put to one side. Prepare the vegetables  Recipe   and start cooking. Peel and chop the garlic, chop the the tarragon, cut the peel from a quarter of the lemon and cut into thin pieces (note you do not need too much lemon). Chop the garlic, tarragon and lemon peel  Picture  .
  2. Put a splash of olive oil into an ovenproof dish over a medium heat, add the veal chops and quickly brown for around three minutes per side. Press the garlic, tarragon, lemon mixture on to the upper side of the chops and finish off in the oven at 375°F/190°C/Reg5 for five minutes or so.
  3. Put a layer of vegetables on to serving plates. add a veal chop and serve  Zoom  .
Serves: Two

Serve with: Spinach, Courgettes and Turnips  Recipe
