Roast Squash - 2Wood Burning OvenVegetarian

Squash seasoned with Cumin and Chilli and Roasted in a Wood Burning Oven - this was great!


largeish squash, preferably butternut

  1. Cut the squash in half lenthwise and scoop out the seeds and discard. Use a sharp pointed knife to score the flesh into approximately one centimetre squares cutting as deeply as you can without puncturing the skin  Picture  .
  2. Smear the flesh of the squash with olive oil, and seaon with salt and fresh black pepper. Grind the cumin seeds using a pestle and mortar and sprinkle over the squash along with the chilli flakes. Put in wood burning oven at around 400°F/200°C and roast for around 45 minutes until soft  Picture  .
  3. When ready take out the oven  Picture  , and use a large spoon to scoop out the flesh into a serving dish.
Serves: 2 or 3

Serve with: Very good with roast duck, goose or lamb
Notes: You could easily do this in a conventional oven it would just not be such good fun
